Kurtoskalacs : the Hungarian tradition.
A typical Hungarian cake also known as sweet fireplace, or fireplace cake, because of its shape. The Kurtoskalacs is native to Transylvania its name comes from the Hungarian word "kürtő" which means fireplace.
It is baked in a professional machine on a cylindrical skewer that slowly rotates over the fire, and is known as the oldest dessert in all of Hungary.
Composed of a thin leavened and sweetened leaf, rolled around a wooden cylinder cooked over the fire. In Italy, this sweet is called bark (because of the shape it recalls) and it is very common to find it at country fairs, festivals and outdoor markets.
How to prepare the perfect Kurtoskalacs?
The necessary ingredients are: flour, milk, sugar, butter, yeast, eggs. For finishing: Sugar, melted butter, cinnamon and flour.
Preparation step: Collect the sugar in a bowl and add the sifted flour. Dissolve the yeast in the warm milk and gradually add the sugar and flour. Add the eggs and yolks, lightly beaten, and continue kneading. Finally, add the butter and mix well until you have a smooth dough. Cover and let rise for about 3 hours. Then spread the dough to 1/2 cm thick, get many strips of about 1,5 cm wide and roll around the roller slightly overlapping the dough and cook in the machine for Kurtoskalacs. Once cooked, let them cool and arrange in a plate, then brush with a little melted butter. The final step is to dip them in sugar and sprinkle with a pinch of cinnamon.
Ideal to bring on the table also stuffed with a tasty filling of custard or chocolate.
