What is the purpose of this kneading machine?
The kneading machines with plunging arms are useful for the preparation of soft dough, such as pizza and for softer pastries, such as the much loved panettone. The movement of the two arms allows to obtain a perfectly oxygenated dough, as if it were hand-worked.
The ingredients can be inserted directly into the bowl to leave the kneading machine to do from scratch. The machine does not overheat the dough during processing in any way so that the flour can maintain its characteristics unchanged, Both in terms of taste and nutritional properties.
