Vacuum cooking: why to use it in your restaurant.
Vacuum cooking, also known as sous vide, is an increasingly popular culinary technique. A low-temperature cooking method that involves preparing food sealed in plastic bags at temperatures between 50° and 100°.
Sous vide cooking allows the taste of food to be enhanced without using too much salt. In addition, thanks to the sealed bags, it will be possible to avoid oxidation and not allow nutritional properties to be lost. Finally, it allows you to avoid sudden changes and thermal shock and incurring burns.
If not done properly there is a risk of not cooking the meat well and thus not eliminating the risk of bacteria or other types of microorganisms. The cooking times are also very long .
The right tools must be used for this type of cooking, which is why professionals rely on professional vacuum machines.
Therefore, to carry out vacuum cooking it is necessary to have two tools:
- the vacuum machine, which is used to create a vacuum in the plastic bags with which to cook food and to seal them.
- the Roner, a tool that enables bain-marie cooking with constant temperature control.
How to cook foods using the vacuum technique?
Place raw foods in the special bags, create the vacuum by removing the air inside them, and put in cooking at a temperature between 40C° and 95C°. Soaking time can vary from a few minutes to several hours depending on the food, which once ready can be stored in the refrigerator or consumed immediately.
Which foods to cook ?
Foods best suited to this type of cooking are fillets or slices of fish, cuts of meat, fruits and vegetables already cleaned and cut, and whole eggs.

Vacuum cooking not only allows you to extend the shelf life of food up to three times but also improves its quality. In addition, you can offer healthy cooking since thanks to this cooking method you can cook without the addition of fat, resulting in healthy and low-calorie dishes.
