CABINETS AND TABLES FOR THE HEAT-INSULATION: WHAT ARE THEY USED FOR?
Fermentation, takes place through the appropriate management of temperature, humidity and time, within specific instruments designed for bread and pastry doughs. The fermalivitation process, in fact, takes place within fermalivitation cabinets or tables in which the dough is stored in an isolated and controlled environment, so that the product can rise independently and according to the set time.
The steps of fermalievitation are :
- Cooling: temperature between -5° and -10°C - From 4 to 6 hours;
- Storage: temperature of 2°C and constant humidity;
- Pre-levitation: about 1-2 hours;
- Leavening;
- Delay or waiting.
Advantages of using a proving cabinet or table:
- Elimination of night work as the baker kneads and prepares during the day the various types of bread that he introduces into the fermalivitazione appliances and through programming, postpones the leavening automatically in the early morning so that when he arrives the bread is already ready to be baked.
